Breakfast is often the most difficult meal to get right on a regular basis because the tried-and-true standbys like cereal with milk or egg whites with vegetables get old quickly, and there’s always the temptation to just grab a bagel or a donut or skip the whole thing entirely and wait until lunch.
Here’s an easy, delicious breakfast that will satisfy your sweet tooth and sustain you until lunch. Best of all, you can whip it up in less than a minute.
Ingredients:
- 1/2 – 3/4 cup of fat-free ricotta
- 1 cup blueberries or other fruit (chop up larger berries or fruits into small pieces)
Place the Vitatop in a bowl and warm it in the microwave for 18 seconds on high or follow the directions on the package. Add the ricotta to the bowl and mash everything up well with a fork or spook to break the Vitatop into tiny pieces. Finally, add the berries and dig in!
